    Salmon Burgers

Lately, I have been on a seafood kick, and salmon has had a HOLD on me. I have been trying to come up with creative ways to shake things up, and I thought why not try salmon burgers?! Salmon (when fresh) is a very delicate and neutral fish. Its versatility allows it to be combined with various flavors and cooking techniques, but most importantly salmon can be done in minutes (which also means that it is also easy to overcook). I recommend cooking low and slow and turning the heat up gently to get a nice sear.  When creating this recipe, I wanted to combine fresh herbs with a little…

    Beer Battered Fish Filet

Like many of my recipes, my inspiration comes from my cravings. I wanted a fried fish sandwich, but I wanted a lighter more flavorful experience. One of the most important aspects of a fried fish sandwich is the crunch on the fish. I am a huge fan of beer batter, but an even greater fan of panko breadcrumbs! At this point, y’all know me… I decided to combine the two. By doing so, I was able to get the ultimate crunch without a thick and greasy breading around the fish. Should you decide to make this recipe, I strongly recommend investing or using a wire rack after frying. Many times…

Cheesy Crab Biscuits w/ Garlic Butter

Listen, it is no secret that I love seafood and biscuits… so I thought, ‘why not combine them?’ A couple of months ago I made Red Lobsters Cheddar Bay Biscuits with shrimp, and my family LOVED them. Experimenting in the kitchen is what I do, so I decided to switch it up a little and add lump crab meat instead.  If you’re feeling lazy like I was you can just go to your local grocery store and grab a box of biscuit mix… or you can take the road less traveled and make homemade biscuits. I snagged my box from Harris Teeter for about $3.29 and an 8oz can of…

    Spicy Salmon Over Crispy Rice

This recipe features my favorite, spicy salmon, but with a twist. You may have seen the new fried rice craze that has taken the internet by storm. Typically, the rice is prepared as you generally would your sushi rice, but formed into a shape such as a square or round and lightly fried. I’m not one to jump at a trend, but I think it’s safe to say that this trend is worthwhile.  A few weeks ago, I decided to run errands and grab brunch. I ended up in Cary, NC at a restaurant called Scratch Kitchen. This place had been on my list for months, so I was beyond…

    Cheesy Lobster Shrimp n’ Grits!

Where shall we start? Let’s center our focus on the grits, as we have the Native Americans to thank for that. They are very similar to ground hominy or maize ( I haven’t tried them yet however, I am open to recipes). Grits are a southern staple, most norotiously consumed in the early 1800’s making its appearance as a cheap way to get full and subsequently feed your slaves.  Just as Africans during slavery were given rotten meat, and my resourceful ancestors turned to seasoning to mask it’s rancid taste; we did the same with grits. Adding spices, and various meats allowed individuals to enjoy what would otherwise be a…

    Homemade Poke Bowl!

Sushi, sushi, SUSHI!!! I absolutely can not get enough (my hips might say otherwise, but that’s my business, lol). I, like many Sushi folk,  started out with the infamous California Roll. It’s a basic roll consisting of avocado, cucumber, and crab stick. I personally believe that you can not consider yourself a Sushi Connoisseur unless consuming raw fish. I can assure you that it is not as scary as it may seem. I like to play it safe with my fish choices; mainly salmon and tuna with the occasional halibut or yellowtail. Prepared correctly and safely, the combination of a soft and smooth fish and the salty/spicy flavors of the…

    Simple Homemade Custard Recipe

Simple Homemade Custard Recipe! Instagram The cake pictured is a tangy lime flavored cake with a sweet whipped buttercream icing… but wait there’s more! You see the drip? Its a homemade key lime custard… lets get into it!  A couple years ago I tried my hand at making a homemade banana pudding. Not the kind where you use box pudding… but the one you actually bake. Although it was quite labor intensive, it was TO DIE FOR! I tweaked my original stove top pudding/custard recipe to incorporate the lime flavor.  This cake like many things in my life was inspired by my mother, and for my mother. She loves all…

    Mini Lobster Rolls

Have you ever had a dream about a buttery and crispy lobster roll? No? Well I’m giving you the recipe anyway. I went to my neighborhood Harris Teeter (I go there like its the mall, lol) and I saw that they had small lobster tails on special for $4.99/ea. I grab 4, and as I walk away I am thinking of what unique dish I can concoct.  I turn, and I see regular french baguettes for $0.99 and I knew exactly what do do. Personally, this was THE best lobster roll that I had ever had… and I’m not just saying that. From the crisp and buttery exterior of the…

    Honey Buffalo Cauliflower Bites

I have embarked on my weight loss journey, and I have been trying to find healthy alternatives to some of my favorites. I know what you’re going to say, “that doesn’t look healthy”… and you’re right! I CHEATED, there I said it… instead of air-frying these nuggets of goodness like usual I threw them into a vegetable oil bath.  Do I have any ‘regerts‘? Yes, after sitting they seemed to be a little oily, but the air-fryer setting on my oven worked perfect. If you are looking for a healthier rendition of this recipe I highly recommend popping these babies into an air-fryer!  Let’s get into these cauliflower bites! As…
