Mini Lobster Rolls

Have you ever had a dream about a buttery and crispy lobster roll? No? Well I’m giving you the recipe anyway. I went to my neighborhood Harris Teeter (I go there like its the mall, lol) and I saw that they had small lobster tails on special for $4.99/ea. I grab 4, and as I walk away I am thinking of what unique dish I can concoct. 

I turn, and I see regular french baguettes for $0.99 and I knew exactly what do do. Personally, this was THE best lobster roll that I had ever had… and I’m not just saying that. From the crisp and buttery exterior of the roll,  the tender but crunchy pieces of lobster, and the tangy and slightly spicy remoulade sauce. Traditionally, lobster rolls are made with steamed lobster, but this elevates it to a whole new level. 

From preparation to completion, the lobster rolls only took me about thirty-five minutes including me taking my pictures and plating. My family had zero complaints, and I doubt yours will too! Without further ado:

Mini Lobster Rolls

Equipment

  • Saucepan
  • Bowls
  • Tongs
  • Plate

Ingredients
  

  • 3 lobster tails small
  • 1 french baguette
  • ¼ cup cabbage mix
  • 3 tbsp unsalted butter melted
  • 3 - 4 cups vegetable oil
  • tbsp old bay seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ¼ cup all purpose flour

Instructions
 

  • Cut your lobster tails down the middle and use your hand to crack the shell. Use your fingers to gently go around the inside of the shell and pop the meat out.
  • Cut your lobster into one inch pieces, and add in your old bay, garlic powder and black pepper. Once combined, add in your flour, mix and set aside.
  • Heat your oil in your medium saucepan on medium heat. Drop in your coated lobster pieces one at a time, and fry until golden brown. Once fried, place them into a paper towel lined bowl or plate and set aside.
  • Cut the ends of your baguette, and then cut your baguette into 2 inch slices. Once sliced, create a slit in each piece.
  • Use a pastry brush to lightly brush the melted butter onto both sides of your bread and toast until golden on each side.
  • Add your cabbage mix into the bread slit then a small amount of tartar, or any sauce of your liking. Top with 3-4 pieces of lobster and finish with a small drizzle of sauce.
